Coffee Cake Muffins

Greetings from Jackson Hole, Wyoming! I’ve done a lot of baking since school’s been out, and hopefully I’ll be able to post a few while I’m on vacation with my family. Wireless access in hotels, even out here in the middle of nowhere, is very much appreciated. So back to the topic at hand — muffins! My mom, dad, brother, and I left Connecticut yesterday around 11, so I had baked these muffins the day before as a special father’s day brunch treat for my dad. He’s a big fan of coffee cake and muffins, so i knew these would be perfect.


I halved the recipe since the 4 of us shouldn’t be capable of eating 24 muffins (key word shouldn’t, not couldn’t haha), and the recipe still came out great. The streusel was delicious, especially complimented by the milk glaze. And like I’ve said before, streusel is fun to say, but of course more fun to eat. I wrapped a few of them in plastic wrap to save for the plane ride, and they held up well. I also left a few home for Ryan so his misery of missing me so much is a little less painful ;-)

This recipe comes from Martha Stewart’s Cupcakes, although she titles them “Streusel Muffins”, I like the name “Coffee Cake Muffins”. I just love coffee cake so much and these muffins are definitely reminiscent of bite-sized coffee cakes.

Off to Yellowstone, I’ll do my best to keep posting throughout the trip!

Coffee Cake Muffins
Adapted from Martha Stewart Cupcakes

For the muffins:
2-1/2 cups all purpose flour
1/2 tsp baking soda
1-1/4 tsp baking powder
1/2 tsp salt
1/2 cup plus 2 tbsp unsalted butter, at room temperature
1 cup sugar
3 large eggs
1-1/2 tsp pure vanilla extract
1-1/4 cups sour cream

For the streusel topping:
2-1/4 cups all purpose flour
3/4 cup packed dark brown sugar
2-1/4 tsp ground cinnamon
3/4 tsp salt
1/2 cup plus 2 tbsp unsalted butter, chilled

For the milk glaze:
1-1/2 cups confectioners’ sugar
3 tbsp milk

– Preheat oven to 350 degrees. Line 24 standard muffin tins
– Whisk together flour, baking soda, baking powder, and salt
– With an electric mixer, cream together butter and sugar until light and fluffy
– Add eggs one at a time, beating until each is incorporated
– Stir in vanilla by hand
– Add flour mixture and sour cream, stir until just combined
– Divide batter evenly among lined cups.
– For the streusel: whisk together flour, brown sugar, cinnamon, and salt. Cut in the butter using a pastry cutter or your fingers, until combined but still crumbly
– Sprinkle half of the streusel over the muffins, pressing it into the muffins
– Sprinkle the other half evenly over the muffins
– Bake for 20 minutes or until cake tester comes out clean, rotating pans half way through
– Transfer tins to wire racks to cool completely before removing muffins
– Once cooled, prepare milk glaze by whisking together sugar and milk
– Remove muffins from tin and place on a wire rack set over a cookie sheet and drizzle evenly with milk glaze

    Oh baby these are super delish! I love coffee cake too. I love it for breakfast and then for a midday snack and then for a predinner snack and then for dessert. Have fun on your trip!

    These are one of my husband’s favorites! and my teen’s. It’s just a scrumptious recipe. Everyone who tasted it, tells me it tastes so much better than Hostess Coffee Mini Cofee Cakes! … And I agree! :)
    Ever since I made them last year, I’ve called them ‘Coffee Cake Cupcakes’!

    made this for new year’s brunch and was a HUGE hit. my super-picky 10 yr old cousin who only eats pb&j, plain pizza, popcorn, and bagels LOVED them – as did everyone else!

    These are very fine muffins that would grace any table. I made them for Easter morning. The flavor is quite mild, though. I will be adding more vanilla, spices, and sugar next time. I also opted to skip using paper or foil baking cups. I just rubbed butter inside each well of the muffin tin and poured the batter directly. They all came out perfectly.

    I followed recipe to a t and unfortunately cannot give good reviews. They taste flour-ish and are not very exciting. The streusel is the only good part! I will keep searching for coffee cake recipes

    I found this on pinterest. I also saw the last comment , but let me tell you! These are fantastic! Seriously! So glad I found this recipe. I guess the person that left the not so good comment must of messed up. I layered the topping inside the cupcake. thank you for this recipe of goodness! ;)

    Erica, when you halved the recipe how many eggs did you add – two or one and a half ?
