Santa Hat Brownie Bites

The dental school had a holiday party last night and in one of the emails concerning the party they said Feel free to bring a dessert if you like to bake”. Even though I got this message the night before, I put my game face on and got creative with the ingredients I already had in the apartment. Since our winter break starts at 12PM today (wahooooooo!), I had a lot of strawberries to eat before I left and knew I could put the little ones to good use:

So cute, and so so easy. I highly recommend you to bring these to any holiday party in the coming days. Your friends and family will go crazy for them, I know mine did! Check out this picture my friend Alyssa snapped about 15 minutes after we arrived at the party (note the clear cake plate I had the Santa hats on):

Those cookies in the back right were mine too, and they were definitely delicious, but not as visually enticing as these adorable santa hats. I’ll be sure to share the recipe for those molasses-gingerbread cookies later! Apparently everyone really, really likes strawberries, most of the chocolate covered strawberries are gone too. Unfortunately they are quite expensive this time of year, but I recommend splurging once and impressing your guests!

Did I mention how easy these were yet? Bake some brownie mix in mini muffin tins, top them with strawberries, and decorate with piped melted white chocolate or buttercream. Beautiful and impressive, go make them now!

Santa Hat Brownie Bites
Adapted from The Crafty Kook

1 box brownie mix
24 small strawberries
2 cups white chocolate chips

– Preheat oven to 350 degrees and grease 1 mini-muffin pan
– Prepare brownie mix according to box’s instructions and fill cavities 3/4 of the way full (I had some leftover brownie mix that I just baked off as regular brownies because I didn’t have enough strawberries)
– Bake for 25 minutes, or until cake tester comes out clean
– Let brownies cool and use this time to hull and clean the strawberries
– Once cool, place strawberries upside down onto brownie bites
– Melt white chocolate in a double boiler and transfer into a piping bag
– Pipe a ring around the base and a small dot on top — work quickly, the white chocolate can dry fast and clog up your tip!

2 weeks off from school = lots and lots of baking, keep checking back for yummy recipes!

    Erica, I am glad you made my Strawberry Santa Hats on Chocolate Brownie Cake and that they were a success! Those are some of my favorite treats to bake. I like how you adapted it and used melted white chocolate chips instead of buttercream frosting.

    So I definitely made these for a party last night and they were a huge hit, thanks for the idea! But since I was running low on time, I decided to use Cool Whip instead of making frosting, and it worked great! I think they looked better too because the white part was fluffier. Great idea, thanks!

    I don’t have a piping bag or a double boiler. I was thinking of using icing that’s in a spray can for the white part. Has anyone tried this or have any suggestions of what else to use?

    Put your frosting in a sandwich bag, or ziploc type bag. Seal it and the just snip the bottom corner of, instant pipping bag. Just toss when done, no clean up.

    You can use whatever kind of frosting or chocolate you want! Even whipped cream or cool whip if you’re in a rush. As far as not having a double boiler, just place a heat-proof bowl over a pot of simmering water or microwave the white chocolate in 30 second intervals. Good luck!

    I am planning to make these tonight for a party tomorrow and I was wondering if the strawberries will be soggy and perhaps I should wait to do this tomorrow. My 2nd question is, Which TASTES better? buttercream frosting or melted white chocolate?

    Great idea- and here in Australia we are having summer so strawberries are fairly cheap! thanks – and we dont have all those canned things like you so we will have to settle for melted choc or buttercream icing.

    I made these with the icing in a spray can and everyone loved them. Be careful if you make them a head of time because the strawberries will run down the icing.

    Just went to the Crafty Kook too….even thought I’d translate it …. lol….has NO mention of brownies never mind and “K”ooking :D unless there is something in “Shizuoka tombstone/grave” :/

    Hi, my son helped make these for his school Christmas dessert assignment to take to school last week. We had a lot of trouble with the white chocolate. It was too warm and just ran everywhere… any tips?

    Is “Kooky Vegan” insinuating she’s the first ever to think of flipping a strawberry upside down and making it into a santa hat? My Great Grandmother used to do this and put them on her cheesecakes around the holidays! Ridiculous. Erica, while you were sweet to do so, if you didn’t get this recipe from said nut job you don’t have to add anything to your post. She didn’t “invent” this idea…haha! Merry Christmas!!

    Diane, I was thinking the same thing. I like how “Kook” said “thanks for making my recipie”! I have been making this dessert since the 90’s with buttercream . I flipped the strawberries and made them Santa hats. Did “Kook” invent cupcakes too?! Like Diane said, flipping strawberries to look like santa hats is not a new thing. FYI, I just tried white chocolate for the first time. Yum!

      I would suggest keeping them in the fridge. They can be left out during a party though!
