Happy Thanksgiving!

We had Thanksgiving at our house this year, and with the stressful past 2 weeks, I was thankful not to have to travel. It was really great to hang out with my family and just relax and eat really good food.

The pies and cheesecake were already taken care of by my mom and Aunt, so I decided to make some sort of cookie in addition. (Not to mention I’m terrified of tackling a pie crust!) I found a recipe for carrot cake cookies on marthastewart.com and thought they’d make a great hearty choice for a Thanksgiving dessert. Voila!


They really did taste like carrot cake, maybe a bit sweeter, and the cream cheese frosting went great. I would recommend using the cream cheese frosting from the red velvet cupcakes I posted instead of the one on Martha’s website, her’s had a less creamy consistency. So if you like carrot cake, these are a great thing to try.

    one of my husbands favorite cakes is carrot cake, so i decided to make these cookies, and he was eating them up as i was icing them…..DELICIOUS!!
