Mini Peanut Butter Cupcakes

Birthdays on Wednesdays are the worst — how do you choose which weekend is best for celebration?? For me this year, I chose the weekend that falls before and headed to NYC to celebrate with some of my closest friends from college. We had a really great time and ate A LOT of great food. Including these adorable cupcakes Amanda and Marissa made for me:


Last year they concocted an equally colorful array of chocolate dipped oreos, pretzels, strawberries, and marshmallows for my birthday but since I’ve become more into baking over the year, they decided to step it up a little too. They were operating under a lot of pressure knowing my high expectations for cupcakes, but they definitely pulled through.


They’re all peanut butter cupcakes, half with strawberry frosting (think PB&J) and half with chocolate (think Reese’s). I couldn’t decide which one I liked better — but the strawberry combo was definitely more unique so that one might have won me over in the end.


Being bite-sized, they made great party food, and that also made it hard/impossible to only eat 1 or 2! But it’s my birthday week, I can do what I want, even if that includes eating 10 mini cupcakes in one night. Let’s just say I’m going to be hitting the treadmill hard after this weekend’s indulgences. I surprised Amanda with a mocha cake for her birthday last fall, so I definitely still owe Marissa something delicious in return — I’ll get to it soon enough. Thanks so much girls for slaving over these little guys, they were great!

    Yeah I do too especially since I believe the few leftovers were in my apt! Such a fun night with you and everyone else. I can’t wait to make my way to Connecticut to visit you!
