Almond Joy Truffles

Madalina of Duh-licious (cutest blog name ever) graciously asked me to write a guest post on her awesome blog, and I just couldn’t say no! My mom’s birthday was this weekend, so I made her a fancy version of her favorite candy — Almond Joys. They’re dark chocolate truffles infused with almond extract and coconut rum, and rolled in toasted coconut and almonds or cocoa powder. Last year I attempted an Almond Joy cheesecake for my mom’s birthday, but although it was really tasty, the presentation didn’t come out as visually appealing as I had hoped, so it didn’t make the blog. This year I decided to go for a more fool proof recipe that I could easily fit in with all the studying that’s been going on over here. They came out deliciously, she loved them, and this year they’re totally photogenic (as is she, of course!).
