Flamingo Cupcakes

Baking has been feast or famine over here – and the past week has been quite the feast! I finally made my way back into the kitchen to whip up three treats in one weekend. I couldn’t let the summer fly by without doing at least a few more adorable desserts to celebrate my favorite season. Trying to balance work, studying for oral boards (how cruel to hold an exam at the end of the summer!), and soaking up the sun, it’s been busy over here. But nothing crazy enough to stop me from making completely frivolous and unnecessary cupcakes for a BBQ with friends!! After seeing this cake made by Oh Happy Day a few weeks ago, I immediately ordered my own flamingo toppers and got to work on my own variation of this cute decorating idea.

IMG_8135 copy While the inspiration cake used dyed coconut, I opted for piped green buttercream with a grass tip for my “grass” decoration. Don’t let the fancy tip scare you – it’s really, really easy to use and you’ll cover your cupcake tops in no time with bright, delicious grass. Coconut is cute too, but I like the height you can get with piped buttercream and I’m really happy with how they came out. The candles I used as toppers were a little excessive – $12 for a pack of 5 – but they sell cheaper decorative picks, or you could cut some flamingo shapes out of bright pink card stock and tape them to toothpicks if you’re extra crafty. Since I made more than 5 cupcakes, I just did a handful with plain grass as well and they all made a really cute display together.

No real recipe here – I used a strawberry cake mix with extra pink food coloring to go with the pink flamingo theme, and made a batch of my favorite whipped vanilla buttercream dyed green for the buttercream grass. And if this is your first time attempting to use a grass tip for the decoration, here’s a video I found that could be helpful! Hope your summer is as frivolous and fun as mine (minus the studying) – complete with flamingo cupcakes and all :)

      This was quite a few years ago so I don’t remember off the top of my head, but I’m sure you could find something similar online! Sorry about that
